Sabine Marbella: The Ibiza-style restaurant everyone will be booking this summer

IT is one of the most beautiful restaurants to open this year.

In the heart of the sand dunes on Marbella’s best beach, Sabine is bound to be one of the hottest tickets for the summer.

What was once the 40-year-old chiringuito Aqui Te Quiero Ver is now this stylish Ibizan style beach joint, where the focus is very much on the food.

Chefs Rafael da Silva and Adrian de Damas are creating the dream menu, a mix of modern Mediterranean.

Chefs Rafael de Silva and Adrian de Damas are behind Sabine’s delicious menu.

Classic Ibizan style mixes with Andalucian charm, while the music is a great mix of Jazz, house and African beats.

Make sure you get a banquette seat and sit back and peruse the menu, a mix of small sharing plates, shellfish and raw bar, salads, fish and meat, including a wagyu cheeseburger and Black Angus fillet steak.

There are some original starters like the ‘chilled tomato water shots’ and Jamon Iberico croquettes served with a Manchego cheese ‘cream’.

A tuna tartare comes with Mexican-style corn tortillas, while thinly-sliced crunchy bravas with an Allioli yoghurt sauce are very popular.  

The most unusual dish is the Devonshire crab salad – the first I’ve seen on a menu in Spain. It comes cooked and dressed – and is served with crispy toasts.

Have a look at the fish counter and, if you’re lucky, you might get a red snapper grilled in olive oil and with capers and rocket. Meanwhile oysters come at 7.50 each.

Alternatively push the boat with the Sabine ‘signature’ seafood platter for two with oysters and lobster and a range of other delicacies coming in at 150 euros.

To end you must have the pavlova pudding with passion fruit that came out like an egg – and needed cracking, its goodness all spilling out before the eyes.

He had dozens of exclusive stories, while his travel writing took him to Jamaica, Brazil and Belarus.

He is the author of three books; Costa Killer, Dining Secrets of Andalucia and My Search for Madeleine.
